The Menu:

Amuse Trio

Tomato Consommé, basil and cucumber
Sweet Pea Panna Cotta, cream fraiche and caviar
Foie Gras, pistachio and strawberry
paired with Domaine Chandon Classic Brut Sparkling: consistently expresses a signature flavor profile of apple, pear and citrus flavors and aromas with a hint of spice that leads to a soft, dry finish.

First Course

Tuna Carpaccio, avocado, harts of palm, serrano, basil, citrus
paired with Trefethen Estate Dry Riesling: this wine captivates with aromas of orange blossom and lime zest. Smiles will be invoked with the lush and tropical palate with highlights of golden delicious apple and dried apricots.

Second Course

Seared Sea Scallops, wild mushroom agnolotti, brodo, sweet pea, sage
paired with 2015 Jackson Estates Anderson Valley Pinot Noir: this wine shows its cool-climate origins in bright acidity, accenting the rich flavors of blueberries, black cherries, cola and dusty spices. The tannins are powerful, yet with silkiness on the finish, while oak barrel aging brings a smoky, sandalwood note.

Third Course

Grilled 7 Springs Farm Pork Rack, braised artichokes, cherry tomatoes, charred onions, balsamic-anchovy vinaigrette
paired with 2013 Hess 19 Block Cuvée: this Cuvée is crafted with mountain Malbec, Syrah and Cabernet Sauvignon blocks, resulting in a singular, distinctive expression of Mount Veeder. The Malbec brings notes of blueberry, black licorice and chocolate, while the Syrah and Cabernet feature red fruits alongside black currant and wild raspberry. A bit of oak spice, vanilla and clove wander in the background.

Strawberry Shortcake
paired with Schramsberg Mirabelle Brut Rosé: generous aromas of raspberry compote, strawberry, cherry and currant joined with hints of pineapple and guava with complimentary bright, bursting flavors of cherry and wild raspberry. The palate is tangy on entry with a mouthwatering acidity & long lingering finish.
